Unit One: Nutrition and Health (25Hours)

In this unit, students will investigate the critical roles that nutrients have in maintaining bodily health, focusing on the mechanisms of digestion, absorption, and food metabolism. The unit also includes an examination of different digestive disorders. Furthermore, students will be trained in utilizing resources like Eating Well with Canada’s Food Guide and other credible sources to foster healthy eating habits and fulfill nutritional requirements.

Unit Two: Eating Patterns and Trends (25 Hours)

This unit focuses on equipping students with the know-how to effectively use Eating Well with Canada’s Food Guide and other trustworthy sources for promoting healthy eating practices and addressing dietary requirements. Students will be involved in experimenting with and adapting recipes to boost their nutritional content, while also learning about the concept of energy balance and its impact on nutrition. The course addresses the evolution of nutritional needs across an individual's life and examines the link between diet, health, and illness. Moreover, students will delve into the study of current and emerging trends in food and nutrition.

Unit Three: Local and Global Issues (25 Hours)

In this unit, students will delve into the various interconnected phases of the food and agricultural system, which include aspects like production, processing, transportation, packaging, storage, selling, and consumption. The course will also scrutinize the inputs and outputs within this system. A key part of the study involves exploring alternative methods and strategies that focus on environmental, economic, and social sustainability, alongside methods to enhance food production for the growing global population.

The curriculum will also address the challenges of food insecurity and chronic hunger, with a special focus on strategies to mitigate these issues both globally and within Canada. Students will further understand the societal, cultural, and political influences that affect access to nutritious food and contribute to resolving food security challenges.

Unit Four: Food Preparation Skills (25 Hours)

This unit focuses on educating students about potential hazards in the kitchen and how to prevent them. It emphasizes the importance of safe and effective kitchen practices, covering key areas such as food hygiene, preventing cross-contamination, and ensuring safety during food preparation.

Exam/RST (10 Hours)

This concluding task, set at the course's end, brings together the diverse learning objectives covered during the course. Its purpose is to gauge and evaluate students' proficiency in showcasing their comprehension, not just through their final work but also through their participation in discussions and observational skills.
